Lamb County, Texas was created from Bexar Territory in 1876 and organized in 1908. The county was named in honor of George A. Lamb, who died at the Battle of San Jacinto.

Olton (settled around 1900) was named the county seat in 1908 until 1946 when Littlefield was elected, and remains, the county seat of Lamb County.
Lamb County has a rich ranching heritage, including the XIT Ranch, parts of C.C. Slaughter’s Running Water Ranch, George W. Littlefield’s LFD Ranch, and William Halsell’s Mashed O Ranch. The county grew as the Santa Fe Railroad built a line from Lubbock, Texas to Clovis, New Mexico, through Lamb County and the town of Littlefield was established along the railroad. The rail was completed in 1913 and more farmers began moving to the county. The town of Sudan was established in 1917. In 1920 the population had risen to 1,175. Ranchers began selling their ranchlands and the small communities of Pep (1923), Amherst (1923), Earth (1924), Whitharral (1924), Spade (1924) and Rocky Ford (1926) were established.

In 2010 the United States Census estimates the population of Lamb County, Texas to be 13,977.
