Miss Evoire Dillingham retired from the education field after a forty-eight year career.  Forty-three of those years were spent at Jefferson School as a teacher and coach of football, baseball and track.

Under her leadership, Jefferson school became the first public school in Texas to install a cafeteria.  She was also responsible for introducing the first physical education program in a Texas public school.
