WOWIE CAKE (one layer)
Recipe contributed by Norma Adams Here is a recipe for a quick and easy cake. I think it must have been the original snackin' cake. It only makes one layer. My mom got this recipe back in either the late 40's or early 50's from the radio. I think she said it was from the old Ruth Lyons 50 Club that used to be on WLW at noon every day. We grew up on this cake. I still make it all the time. It's a good cake for anyone who is not allowed eggs. No eggs in it. My kids insist on this for birthday cakes. Topped with the 7-minute Fluffy White Cooked Icing, it's scrumptious. Or, just sprinkle a little powdered sugar on it, and eat. The best part about it is if you only want one layer to snack on, you can mix it up right in the pan you are going to bake it in. I double the cake recipe and make two layers for birthday cakes using a mixing bowl. 1 c. granulated sugar 1 1/2 c. flour 1/2 tsp. salt 1/4 c. cocoa 1 tsp. soda 1 tbsp. vinegar 1/3 c. salad oil 1 tsp. vanilla 1 c. cold water Sift first 5 ingredients into 8x8 pan. (Can also be a round pan) Add the rest of the ingredients, stirring until smooth. Bake 30-35 min. at 350 deg. Cool and ice or let it cool a few minutes and eat up with a big glass of cold milk! Gooood! Seven Minute Fluffy Frosting (use high speed on mixer) Combine in top of double boiler (a large one, this stuff really grows) 2 egg whites 1 1/2 cups granulated sugar 1/2 c. water 1 tablespoon white corn syrup 1/2 tsp salt 1 tsp. vanilla Beat eggs slightly then place over simmering water. Beat at high speed for 7 to 10 minutes or until mixture holds stiff peaks. Remove from heat and blend in vanilla. Ice the cake. You need to do this sort of fast. This frosting can set up very quickly as it cools off.
