The Colfax County Press publishes a weekly column entitled Peeking into the Past, which is comprised of articles taken from earlier Colfax County Press files, written by Helen C. Evans. September 7, 1922 - reprinted February 1, 1995A large number of Clarkson people went to Leigh today to be present at the opening day of the Colfax county fair which lasts until Saturday. We are told by those who just returned from there that the exhibits are plentiful and a splendid representation of Colfax county's agricultural interests. The stock and poultry departments are also well filled. Various other attractions have also been provided for the enjoyment of the public.
Every housewife is aware that the actual cooking of a dish is a very important factor of success or failure. A "hot oven" and a "moderate oven" are often referred to, and testing by holding the hand inside for a few seconds is a method frequently employed.
But there is no real dependency on such haphazard methods, since one person can bear much more heat than another. Therefore, in an efficient household a kitchen thermometer to register cooking heats should be considered as necessary as a clinical thermometer. There are two varieties of kitchen thermometers to be had. The cheaper kind is of white china and can only be used for oven cooking.
A more durable make, of brass, which costs a little more, can be used for testing frying fats, etc., and will not break so easily.
A iron leg supports the thermometer, so that it stands upright and can be read at a glance when in the oven. Every degree of heat from low to high temperature is registered, and at the side the standard temperature for cooking are printed.
September 28, 1922 - reprinted February 8, 1995The Heun base ball club feels sorry that so many were disappointed in not seeing the aeroplane which failed to appear on the field last Sunday afternoon. We were notified Monday morning that our ship left St. Joseph, Missouri, Sunday morning but had to land before reaching Lincoln, being unable to get here on account of motor trouble. All those who are uncertain of it and especially some of the base ball knockers of the Heun neighborhood have the right to call up the Nebraska Air-Craft Corporation of Lincoln, and if they find that no arrangements were made as per our advertisement, the Heun ball club will pay their expense.
The football season will open in Leigh this afternoon, when the fast bunch from Osceola high school will be here for a mix on the local grid-iron.
The Walther League of the Zion Lutheran church has organized a band among the young men of the church. The organization starts out with over 20 members, and as soon as instruments can be procured rehearsals will begin. Prof. Rewinkel will be the director and the boys are certainly fortunate in having at their head a man with qualifications of Prof. Rewinkel. Prof. Rewinkel is not only a thorough musician, but has had considerable band experience and is thoroughly capable of directing the organization.
